Turkey Fryers

Within the culinary world, it’s known that the traditional baking of a turkey is actually not the best method for producing a succulent bird. Why? Because the dark (leg/thigh) meat takes longer to cook than the white (breast) meat, resulting in a dry, flavorless, overdone meal. The solution: going fried.
Anyone who has tried a fried turkey will tell you, it’s in a league of its own. If the oil is kept at the proper temperature, it quickly seals in the juices, does not get into the meat, and cooks quickly and evenly, producing an uber-flavorful bird in about 3 minutes per pound. Plus, fried turkeys are traditionally injected with liquid seasoning, which supercharges the taste.
While we won’t go into the potential hazards of sloppy execution (just look on YouTube), when done properly, turkey frying can be a great and non-lethal experience. For those who don’t want to brave the propane tank, cauldron of boiling oil and cool weather, Masterbuilt has released an indoor version that can be used on your countertop. For an outdoor kit, check out the Bayou Classic at Pelican Sky (a good website for outdoor cooking gear).
